Okay Tiggerdad, here's the recipe for Butterscotch cookies:
It's a double batch and makes a lot of cookies, so you might want to cut in half.

Mix 4 cups brown sugar with 1 cup butter (I use butter Crisco). Add 4 eggs to this and mix.
Stir in to mix: 1 tablespoon baking soda, 1 tablespoon cream of tartar, 1 teaspoon nutmeg, 1 teaspoon salt.
Add 6 cups of flour GRADUALLY to above mix until able to mold it into loaves. Makes 2 loaves. Refrigerate overnight.
Slice into appx 1/2 inch slices and put at least 2 inches apart on baking sheet. They spread a lot!
Bake at 350 degrees for 13-15 minutes or til light brown. Enjoy! They are an old fashioned cookie with an old fashioned recipe. I modified it a little.

Okay, as promised I took @disneyseniors recipe and gave it a go. I put it together yesterday.

I had an elderly assistant on hand as well

So I mix it all up, halfing the mix since there's only the 4 of us. I made this into a loaf (not very easy as this stuff was sticky!). Anyway, this morning I awoke and my loaf had turned into...
IMAG0826.jpg

Bit flattened out...
Cut it up, well roughly anyway, and laid em out.

For some reason the Dis is only letting me put 4 pictures per post...:headache:. Been trying to finish this post for 15 minutes.

Now can't upload pictures. :badpc:

After 20 minutes we got some good looking cookies that had spread out nicely. IMAG0830.jpg
They have more of a gingerbread taste than I had imagined, but we're quite good (especially with egg nog). The elderly assistant agrees.

This turned out quite well.

Anybody else got a recipe? Boy, I sure am glad we brought up this cookie thread. :worship:

Thanks, tiggerdad. I'm glad they turned out for you:) It is sticky dough and the loaf always looks kinda flat. They are kinda hard after a while, but that's the way my Dad liked them. I only wish he was here to enjoy them! Glad that you liked them. I made oatmeal cookies today, YUM. Let's start a dedicated thread to cookie recipes?

@SouthAlabama5er has come to visit and he tried them and gave a thumbs up as well.

It has been a long week at the death/funeral of a wonderful sister in law, however; a great neighbor brought these cookies to the funeral luncheon on Friday. Here is the delicious recipe.

Andes Mint Chocolate Cookies

1 1/4 sticks butter
1 1/2 cups brown sugar
2 T water
2 cups chocolate chips
2 eggs
2 1/2 C Flour
1 1/4 tsp. baking soda
1/2 tsp salt

Melt butter, sugar & water in microwave until butter is melted. Stir in chocolate chips until melted. Let cool 10 minutes.
Add eggs, one at a time. Stir in flour, Soda and salt. Chill for at least 2 hours.
Shape into balls ( 1 inch or so). Bake at 350 for ten (10) minutes. Place 1 Andes mint in center of each cookie, pressing down. Once melted, spread with knife and place on cooling rack.

We doubled the batch and the double recipe made about 7 dozen cookies.

Aight, added to the menu. We'll give these a shot as soon as we wipe out these butterscotch cookies.
