S/O taco thread, how do you make yours?

I've always made ground beef tacos, using an Old El Paso taco kit. I'm more than ready to try something new, to taste more like the tacos at (authentic Mexican, not Taco Bell) restaurants. What's your favorite recipe?
 
I just brown my beef with what ever seasonings I have on hand. Except, ALWAYS, use cumin. I had to start doing it that way because one dd didn't like the taco flavoring. We usually make soft tacos with tortillas and I put out pico de gallo, sour cream, cheese, tomatoes, avocado, spinach(instead of lettuce..same dd doesn't like lettuce :) ) and black beans. Sometimes I will sautee some onions/peppers too. If I forget the tortillas, we'll make it taco salad and use tortilla chips to crumble on top.
 
I use the corn tortilla's and fry them in some oil. Not crunchy but to stay soft. I brown meat no seasoning, dh does not like spices. And cut up what I put in them.
 
We've been making these chicken tacos recently and they've become a family favorite. They remind us of the tacos served from our favorite taco truck. DH and I like it on corn tortillas. *i don't always have green onion on hand so I often just sauté some regular onion with the chicken instead. Also, I don't usually have to sauté the chicken quite as long as it says in the recipe. I just cook till the chicken is almost done, then add the sauce and cook till the sauce thickens.
 


It depends on what I have on hand, and what we feel like.

Hard shells. Taco boats. Flour or corn soft tortillas

Cumin and ancho chile powder (or chipotle powder), some salt on the meat.
Beef, chicken. Sometimes fish or just vegetarian.

Sometimes black beans, sometimes refried.
Sauteed peppers and onions (just until slightly softened, I like 'em crisp; use oregano and salt here)
cheese (shredded cheddar type or queso fresco); sour cream
Lettuce, tomato, green onion or thin sliced sweet or red onion (I don't use yellows at all); cilantro
Jarred salsa (we like Frontega brand) or homemade fresh (red onion, tomato, jalapeno, cilantro, lime juice)

For a more "authentic" taco, we do thin corn tortillas, doubled; chicken sauteed with cumin, chile powder, salt and lime juice; fresh salsa; cilantro, and more diced onion.
 
I season ground beef with homemade sofrito, fresh garlic, Adobo and sazon. I make a pico de gallo which is just tomato, onion, cilantro and lime juice. I only put that on my tacos. For the rest of the family I have cheese, lettuce and sour cream available. Sometimes I buy the crema if I can get to the Spanish store or SO's mom picks it up for us.

We have corn tortillas and hard shells available.

for the meat filling:

browned ground beef
chopped cilantro, diced onion, and finely diced tomato
cumin
chile powder
garlic powder
salt
paprika
occasionally finely diced potato sauteed in Adobo seasoning first until potato is soft, then add into meat mixture at the very end. (mostly if I need to stretch the meat for more people)

Toppings:
queso frecso cheese, crumbled
sour cream
green salsa left over from the best little taco stands in our area
DH occasionally likes lettuce and tomato, but the rest of don't, so he usually goes without.
DS10 and I like finely chopped onion and fresh cilantro on top of ours.

Tortillas:
Corn heated on a flat griddle with a tiny bit of oil
flour warmed up in a damp towel in the microwave

We never use those seasoning packets. Yuck!

Haha, my kids LOVE those potatoes! They ask me to make them all the time for a side dish without even making tacos. We got the recipe from my MIL

She also puts peas in them. VERY sparingly. She said it's from growing up poor and having to stretch the meat. I think it makes them so much better!

And I didn't mean to put that emoji. It was supposed to be a regular smiley face. :)
 
I've always been curious - what's "officially" the definition of a taco v.s. burrito?
 
I prefer using shredded chicken or shredded beef in my tacos, I just cook the meat in a crockpot or my instapot, then shred and season the meat in a pan with a little liquid left over from the pot. I have one child who like crunchy tacos so I always buy whatever is on sale. For the rest of us I use corn tortillas or make them myself. It just depends on how much time I want to invest. I don't use prepackaged taco seasoning. I make my own. It's super easy and I make a big batch of it and keep it in a mason jar in the cupboard.

  • 2 teaspoons Chili Powder
  • 1-1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Crushed Red Pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Dried Oregano
  • 1/4 teaspoon Black Pepper
And I always make rice and black beans to go along with it plus cilantro. I grew up in southern California but now live in Ohio so I can't really get decent tacos here. I make them myself.
 
I use the McCormick mix. Usually soft shell tortillas (whatever brand I happen to grab) and whatever brand of shredded cheese (Mexican blend) happens to be handy. Sometimes shredded lettuce if I am feeling extra ambitious.
 
I make about 3/4lb ground beef, mix in garlic, onion powder, cumin. Then a can of refried black beans. If we are out of beef, we do just veggie and bean.

Also fajita style peppers, onions.

Toppings are cheddar cheese, sour cream, Ortega, tomatoes, lettuce, fresh jalapenos (I prefer them to jarred), avocados.

Tortillas are flour or corn, based on what we have. I prefer them fried. If I am too lazy to fry them, I just make a salad of everything. When we had a stove with the coils, I would cook them right on the coil - love the char flavor!
 
I brown a pound of ground beef with a chopped potato. Add a small can of chopped green chilies. Salt, pepper, crushed red pepper. Topped with shredded lettuce, shredded cheese, and HEB's refrigerated salsa.

I hate seasoning packets. They always seem too strong on the chili powder.

We use corn tortillas, boxed stand and stuff shells, or lettuce cups.
 
I like the ole del paso kits when I'm in a rush, but its nice to scratch cook.
I usually just make a similar recipe to what I do for Chilli, but with less liquid.
I use minced beef, fry it off with onion powder (id use real onions, but OH hates them), garlic powder, cumin and smoked paprika if I fancy a smoky flavour. I add oregano usually and a touch of cinnamon too. We can't handle any heat, and like it mild, but if I was making it for others, I'd probably add a touch of chilli powder. I remove from the heat then dry fry some sliced peppers till they start to char (here is where I really miss the onions).

I prefer soft tortillas to the hard shells, as I end up with food everywhere but my mouth if I use those.

Layer it up with the meat, peppers, salsa (OH skips this), sour cream and a bit of cheese if I feel like it, but usually prefer not.
We're not guac fans, and the smell of Cilantro/Coriander makes me feel sick so we avoid that.
 
We made fish tacos the other night. They were sooooo good.

We fried pieces of tilapia dipped in a slightly spicy beer batter. We added cheese, avocado, salsa, and chipotle ranch dressing. The most important ingredient was the shredded cabbage which added a great texture. We used a soft taco shell warmed up. We are going to have them again this week. Yum!
 
If I make tacos at home, I am making "American tacos." Ground beef (either with chili powder and Natures Seasons or Lawyers taco seasonings), cheese & lettuce. Corn tortillas - slightly fried aka "puffy tacos."
 
Tried a FB recipe the other night with chicken breasts in crock pot with taco seasoning packet and ranch seasoning powder sprinkled on top and cooked on low for 7 hours. Fork shredded and used on flour tortillas with usual toppings. Very tasty and family loved them.
