Another vote for Animal Kingdom Lodge. The resort is just beautiful and stay in Jambo House vs. Kidani Village. The down side though is as of right now, most of the dining is closed.

Don't try to do it all - it's impossible. We were there 10 nights for our Honeymoon and still didn't get a chance to do everything we had hoped to. Don't run from attraction to attraction. There's no much detail in the parks, take time to appreciate it.
I think that week will be crowded. Our trip ends September 24th and hotels are sold out starting around the 22nd for several days. I think this year, it's going to be busier than typical, not only because of the Anniversary but I think people just want to travel.
