Unlikely. Undercover Tourist tickets are refundable but not changeable (according to their TOS). If the tickets were purchased directly from Universal, you could call or email Customer Service and throw yourself on their mercy to request a date change, but I doubt they'd work with tickets...

I've stayed at CBBR but not Dockside. Personally, for a $100 total difference, my fondness for CBBR's pools and lazy river + familiarity with their food court would win out. And it's closer to Aventura if you want to hit their bar.
