Are you flying into Canada or the US? Mco you can prebook going through security. Usually 2-3 hours before depending if it’s a international flight or not

Yes I would still do a full day. There are lots of things for older kids. Space Mountain, big thunder mountain, mine train, pirates. If your only ever going to go once as a family do NGic Kingdom

I would take the rest day. Check out springs, chill at the pool. It is a vacation after all

My work always puts me at the Hilton by the airport It’s really nice. Stayed a couple of times on my own dime and it was pretty well priced
