What's on your dinner menu this week?

Tech week for our show so I had to get back on the meal planning bandwagon. I also got an instant pot for christmas that I am LOVING LOL

Monday - chicken enchiladas using the leftover meat from a whole chicken I made in the IP last night
Tuesday - Oven roasted kielbasa and veggies with rice
Wednesday - Homemade pizza
Thursday - Pot roast and mashed potatoes in the IP
Friday - Cheesy ranch chicken in the IP (some people call it crack chicken lol)
Saturday - "easy" food - chicken nuggets, mac and cheese ,hot dogs
Sunday - leftovers!
 
Yesterday - Fajitas

Today - sweet chili chicken, brown rice, broccoli

Other things this week in no particular order

Mexican Lasagna (aka enchilada casserole) (likely two dinners and a lunch)

Chicken Parmesan with whole wheat spaghetti and zucchini

Wood Fire Pizza at Pint Night

Thursday - Turkey Sandwiches, French Fries

Friday - Pizza

Week of Feb. 10- Feb. 15, 2020

Mon.- Panko crusted pork chops with roasted Brussels sprouts and carrots. Green salad.
Tues.- chicky livers criollas y china style w/ yellow rice, black beans and an avocado and hearts of palm salad.
Wed. - Chicken noodle soup using leftover roast chicken, vegetables and frozen stock. Maybe I'll add dumplings.
Thu. - Meat loaf, roasted new potatoes and roasted root vegetables.
Fri. - Shrimps and leeks curry over rice. Profiteroles with whipped cream and berries for dessert.
Sat. - Beef stew.
 
This week:
Monday--Hamburgers and fries
Tuesday--Whole wheat pasta with chicken sausage and baby spinach
Wednesday--DW and I have pizza out and a budget meeting
Thursday--Honey Garlic Shrimp with cauliflower rice
Friday--Probably a Valentine's Day outing with DW. We're both off that day, so probably a late lunch and then a movie
Saturday--Slow Cooker Tex Mex Turkey Tacos (recipe from Skinnytaste)
 
Monday- Chicken tortilla soup
Tuesday- Garlic and chicken pasta
Wednesday- not sure
Thursday- sons birthday- so probably sushi restaurant

tomorrow: chicken thighs (instapot BBQ), veggies

Wed: meatloaf, mashed potato, veggies

Thurs: leftovers (chicken, meatloaf + sides)

Fri: fried breaded tilapia, fries, veggies

sat: leftover Super Bowl chili (frozen) for DH and I; DS ?

Sun: pork chops (shake n bake), veggies

Monday...new ways to eat Costco Chicken

Wednesday.....ramen noodles with greenpeas and ground burger fried to crispy bits...worked for 12 hours straight,time for bed
Thursday......steak and baked spuds with fresh green organic lettuces harvested from our Yuma garden.
Friday....potluck,,,,,community gathering night for cards.

OK. You made me change my mind. Switching chicken noodle soup to chicken tortilla soup and that's a good thing:). Have exactly 3.5 tortillas left in the fridge which is perfect on this end and thanks for the idea!

It's almost the end of my week so I'll have to start picking next week's meals pretty soon too
 
  • Sunday - Giant turkey Parmesan meatball and broccoli (left overs for lunch on Wednesday for both)
  • Monday - Cheesy chicken enchilada skillet and salad (left overs for lunch Thursday and Friday for me)
  • Tuesday - Egg roll in a bowl (leftovers for DBF lunch on Wednesday)
  • Wednesday - Chicken broccoli Alfredo casserole (no noodles) and salad (making small enough for no leftovers)
  • Thursday - out
  • Friday - Crab cakes, asparagus and 1/2 baked potato
  • Saturday - Ruth Chris Steakhouse for belated Valentine's Day dinner
 
BTW, does anyone else love meal planning and grocery shopping? I get up on Sunday morning, get out my cookbooks and favorite websites make meal plan and grocery list for the week.
