Will the resort do this for us...

We are going to be going next Sept. for a split stay of 7 nights and 8 days. At the start of our trip we will be at Beach club, after a few days we will than go to the cabins, and than finally to Poly at the end.

Since we are driving the problem I for see is that we will park our car at Beach Club once we get there, but when we leave we will be leaving from Poly. I know that when you split stay they will move your luggage around on property to your next resort. I am hoping that on our last day we will be going to Epcot again, and I would like for Poly to move our luggage back to Beach Club so we don't have a big ordeal getting luggage to the car when it is time for us to go. We can just go to Epcot, have fun, than walk to Beach Club get our luggage and load up the car.

Parking is for resort guests. Move your car when you move.
 
We didn't do a split stay, but we drove on our last trip and did Epcot the last day. We stayed at WL. We were allowed to pull our car up to the front of the resort and load it up. We carried it all out ourselves, but you can definitely have bell services bring a cart and assist you. My husband is just cheap and didn't want to tip bell services! We put everything in the car and then headed to Epcot in the car and hit the road from there. It was very easy. That's what I would recommend doing.

Just to note - you will need to move your car to each resort. You can't leave it parked at BC the entire time.

As PPs said, you need to move your car to the resort you are staying at. You could load your luggage into your car and drive to Epcot on that last day. If you don't want to have your luggage in your car on the last day, then leave it with Poly bell services and take the monorail back to the TTC at the end of your day in Epcot. It's a short walk from the TTC to the Poly. Then you can load your car and leave from there.
 
Why wouldn't you move your car?
Pack it up and then take the monorail to Epcot and back to get it when you're ready to leave.
If you want the advantage of being able to walk to Beach Club at the end of your last night to pick up your car then that should be the resort you're staying at last.
 
You need to take your car with you when you move to the cabins and then again when you move to the Poly. You're entitled to park at each resort only on the dates you're booked to stay at that resort. You can't park up at BC on day one and then go back to retrieve said car on the day you leave... from the Poly.

No, they won't do that for you.

Just pack the luggage into your car that last morning and drive to Epcot. Then your car and luggage will be waiting for you in the Epcot lot afterwards. That's the simplest solution, given that you're ending your stay at the Poly.
 
Your free parking will expire at your resort the day you checkout, you can't just leave your car wherever you want, they would probably have it towed, you'll have to take your car, along with all your belongings when you move, that's the part that sucks about a split stay, packing up and moving even though they will move your luggage they won't move your car

You can park for free at the parks as a onsite hotel guest. Just drive your loaded up car to Epcot on your last day.
Just leave your stuff with Bell Services at the Polynesian and return there after you leave Epcot. Drive your car up to the front and get Bell Services to load up your car.

Why not load up before going to the park? A lot easier than giving it to bell services and then having them retrieve it when you're ready to leave especially if they did drive to Epcot anyways.
 
Even if the Polynesian Bell Services would send your luggage back to BC that last day, which they won't, it can take all day for the luggage to get there. I once had my luggage moved from one room to another (not-yet-ready) room a a single resort, and it took over twelve hours.

Keep in mind, any toiletry item (make-up, deodorant) will almost certainly melt in the trunk of a car unless it's the dead of winter.

Some people are uncomfortable leaving all their stuff in the car all day in a parking lot due to the risk of theft. It's safer if you have a car with a trunk so the luggage is out of sight, but if it's a SUV or minivan, the luggage is exposed to anyone looking in vehicles for something to steal.
