What did you bake today ? OK if not from scratch

Tomorrow is December 1st, which means tonight was cookie night #1. Four batches of snickerdoodles, resulting in 13 dozen cookies for three workplaces. :santa: DS moved to a new position at a different location this year, so tomorrow is the first cookie experience for his new coworkers.cookies2023-day1.jpg
 
I’ve always wanted to make a cake roll but for some reason haven’t attempted one yet
I see them make cake rolls on the Great British Bake Off all the time and always wanted to make one. I’m too chicken.

It's really easy. The only scarry part for me was turning the pan onto the powder sugar covered t-towel. The cake didn't fall out too soon, it fell out just as it reached the t-towel. :cutie:
 
The kids and I have a holiday tradition where (usually) we bake a cake and either split it into 2 or 3 to decorate (but usually tied to the holiday it's near - we do Christmas, Easter, Halloween, I think the Fourth). The oldest didn't want to participate this time - so this was all the work of my 7 year old (the decor - I did the frosting, lol).

Salted Caramel Cookie Cup filled with tiramisu, whip cream and strawberry syrup.

NOTE:
Cookie dough was prepackaged.
Whip cream from a can because I was lazy - I usually make fresh.
The strawberry syrup is Strawberry Real, Strawberry Puree Infused Syrup (this stuff was surprisingly good - I bought it for margaritas. I've used it to make chocolates as well.
I did make the tiramisu.

Chocolate Covered Strawberries.

Can't believe what they charge for these things - I bought them so many times - they are very easy to make the hardest part is finding good strawberries.

You can get the chocolate at Walmart (GHIRARDELLI Dark Chocolate Flavored Melting Wafers, 10 oz Bag is like $5) and just melt it in the microwave.
 
Day 2 of Cookies: Chocolate Peanut Butter Chip. I always do a batch of a different cookie when the main cookie has peanut butter (due to a coworker’s allergy). I tried a new recipe for that: Orange Shortbread dipped in semi-sweet chocolate.

Whew! Day 3 is down. It's an Ooey Gooey Butter night. I also found a gluten-free cake mix, so I was able to make a coworker her own little box. So, 10.5 dozen and I expect most of those to disappear tomorrow. They're usually a favorite. :)

We went to a wedding and left before the cake was cut. I honestly think they forgot about it.

Anyway, I was so bummed that I didn’t get a piece of cake that I baked myself a double layer vanilla cake with buttercream frosting. Then I made my husband feed me a bite and vice versa like the wedding couple. 😂

Yep, I take wedding cake very seriously.
 
I made lazy chicken and sausage gumbo to clean out the fridge. It was lazy because I made the roux in the oven, then baked the gumbo in the oven as well. I was thrilled at the amount of odds and end ingredients I was able to find and use up. Soups and stews are great for using stuff up.
