Also, international guests that don't have data plans would have difficulty doing mobile checkout in the shops. I know Disney parks have Wifi but it doesn't work great 100% of the time and these guests tend to bring cash (this is based off of posts I've seen on here and other social media platforms).
Plus, if you have to use Disney wifi, it’s not secure. I can understand people not wanting to process credit card payments via unsecured wifi, since not everyone uses something like Apple Pay.

Side question . . . Do we get our AP discount when using the Mobile Pay? I haven’t tried it yet because I wasn’t sure.

You do. My sister used Mobile Checkout at Creations last week and it applied her AP discount automatically.

I think those are all/mostly outlet stores. I know the one in WA is but it doesn't say that in the description. Though when I went last year it seemed like it was more shop disney stuff that hadn't sold and for not very good prices and way less park stuff like before. The prices weren't as good overall as they'd been before so I haven't been in a hurry to go up there again.
Same for the one store in NJ. It's definitely an outlet store, which is not noted on that list.
