Ok - I am a good enough cook - nowhere near a chef! Although the kids do at times really enjoy some of what I make (not always lol). There are days I enjoy it but mostly it is something that HAS to be done. I have gone through phases of getting the kids more involved - I really need to get back on that! I do try to talk especially to DS15 about the importance of balance in his diet as he is a total junk food addict - and will always choose choc chip cookies over fruit when hungry - he is ok bodywise now - but I know from experience that it catches up with you eventually! My cooking approach has been undergoing changes - I am moving more to home prepared and things that I can get more than one meal out of e.g. pot roast or roast chicken, then use the left overs in a few different ways. The home made roast chicken is so much less greasy than the store bought rotisserie chickens and the kids love it - it is so good when they are trying to steal it when you are carving it up saying how yummy it is I use a turbo/convection oven for it so it is not sitting in any oil while cooking and they come out so well cooked.
Southern Food - Fried Chicken! lol I also like gumbo (I do a version here from a healthy recipe book I have so not sure how authentic it is!), DS12 loves beignets.
