My PT is going very well. I am not 100% yet, but a lot stronger than I was. Yesterday I saw a woman who did a lot more damage to her meniscus and had been on bed rest for two weeks before she could even put weight it. She was in tremendous pain still so I know I am blessed, it could have been so much worse.
You know, everytime I try a new recipe DH asks where did I get it. My answer is usually a vague "the internet" or "friends on the net" - when more often than not my source is HERE! Don't know why I feel the need to keep my DIS time a secret?!?

Do y'all put any kind of meat in your penne vodka? We are such carnivores that I feel strange making a meatless meal.

Aimee, I've never attempted this for that exact reason. My guys would say "where's the meat?". Let me know what you decided and how it came out. Also is the recipe posted here?

Our dinner was not as good as I had hoped. I couldn't really do what I wanted because I was working with only one good hand. Tonight when I was leaving the gym, my knee went out and I went to the floor, hard. I have a lovely goose egg just below my knee which is hard to see since I also took all of the skin off of that area. However, the issue I'm most concerned about is my left wrist. I jammed it or something trying to catch myself. It is really sore tonight and a little swollen. I am hoping it is better by tomorrow because it sure is hard typing with one hand. I'm such a clutz.

Herbed simmered Beef stew
2Lb beef stew meat 1" cubes
freshly ground pepper
2 tblsp flour
2 tblsp olive oil
3 cups sliced mushrooms
3 cloves garlic minced
1/2 tsp each dried marjoram, thyme and rosemary crushed
1 bay leaf
1 can 14 oz beef broth
3 c fresh baby carrots
12 whole baby red potatoes
season beef with pepper and coat with flour. Heat oil in a large saucepan. Add beef and cook until browned stirring often. Add mushrooms,garlic and herbs and bay leaf. cook until mushrooms are tender and liquid evaporates. Add broth. Heat to a boil. cover and cook over low heat 45 min. Add carrots and potatoes heat to a boil. Cover and cook addl 30 min or until done over
low heat. Remove bay leaf serves 6
It turned out to be tasty but honestly, the jarred stuff is cheaper, easier, and dare I say - tastier. I'm glad I tried it once but I'm going back to the easy stuff. Plus I almost cried when I poured all that vodka into it!
DH hasn't made it home yet to hear his opinion on it. I bought some really cheesy and buttery garlic bread so he probably won't complain too much!
