Eat at Home 3!

Last we had beef and vegetable stir fry over rice.

Tonight will be pork tenderloins with cous cous and sauteed veggies.
 
Another crazy week behind us with only half eating off the menu...sigh. One week until we leave for vacation and I'm gonna be a super budget cooking ninja this week!

Sun: Texas Roadhouse with my entire family (all 30 of us!) for my grandmas birthday

Mon: Teriyaki chicken, steamed rice, broccoli

Tues: Hot dogs, mac & cheese

Wed: Super nachos

Thurs: Oven fried pork chops, broccoli/cheese & rice

Fri: Crockpot beef tips over noodles, green beans

Sat: Smothered chicken, buttered potatoes, corn

Sun: Easter dinner
 
We had a difficult time last week. My DH and DS got a virus. I didn't cook a couple of my meals last week so I am making them this week.

Monday: Chicken, broccoli and noodles

Tuesday: Chicken tacos, Nachos

Wednesday: Spaghetti and homemade meatballs, green beans and rolls

Thursday: Pulled Pork sandwiches, coleslaw and sweet potato tots

Friday: Shrimp fried rice and vegetable egg rolls

Saturday: Breakfast for dinner

Easter Sunday: Turkey, buttered carrots, homemade macaroni and cheese and rolls

Trying to clean out the freezer of all older items and most especially of all the freezer pack meat that we got from the butcher. Needless to say...we won't be getting that deal again. So far, we DO like their sausages, their bacon and their NY strip steaks...but I can get good chicken breasts and ground beef and pork chops elsewhere for cheaper and we did not like the schnitzel, eye of round steak and souvlaki enough to warrant buying them again. Anyway, we finished off the souvlaki last week, tomorrow is the last of the schnitzel and next week the last of the pork chops so we'll be back to our old methods for filling the freezer with our preferred items.

Just made most of my menu. Trying to use up the meat in my freezer so it's a lot of chicken!

Friday- either fish or porkchops for DH , I have a girls night planned

Last week did not go so well. Between work and doctor appointments we ate out way too much. This week I plan on cooking every night and using up the freezer items.

Today we had a big brunch of ham and cheese strata, spring mix salad, watermelon, and jello eggs. Dinner will be leftovers, whatever.

Tomorrow my plan is chicken parm with salad.
 
I hope everyone had a wonderful Easter! We spent our weekend at the cape cod. My girls loved the beach even though it was cooler they had a lot of activities and a lot of frozen drinks :)

This week is school vacation week - we are home as Hubs and I are both working and DS has LAX every night..

Sunday - Delish Easter dinner of turkey, ham, stuffing, mashed potato, sweet potato, squash, green beans, salad, rolls and dessert!
Monday - Grilling burgers, mine on lettuce, with chips for the boys
Tuesday - Grilling chicken, roasted CF for me, garlic shells for guys, green beans for all
Wednesday - leftover ham dinner
Thursday - Keilbasa on the grill in foil packets with onion, CF and cabbage in mine and potato and onion for the guys
Friday - fish, green beans and CF for myself and pizza for the guys..
weekened - ??
 
Mon-chicken, mushroom and bacon kebabs, garlic potatoes, veggies and hummus
Tues-steak, not sure of sides
Wed-homemade hawaiian pizza

Well, we ended up eating out Friday night, Sunday noon (Easter) and Monday night. Ugh. But I'm back on track.
