Unfortunately the only RMC I've gotten to ride is the new Texas Giant, it was a great ride. However, it was no Real Texas Giant. Like you said though, the problem with RMC is they have to take out a really great, often iconic, woodie to make it.
I am just slightly old enough to remember when nearly all woodies had buzz bars. My first coaster was Judge Roy Scream, sitting between my mom and grandpa with a buzz bar. Since then it has gained seat dividers, headrests, seat belts, and individual lap bars, that the ops insist on crushing into you, at least it still has skid brakes.
I also used to love the reworked Son of Beast (really my favorite coaster of all time), could ride in any position and feel fine, because I left the lap bar completely loose and hand my hands up. I'd go with friends that would crush themselves with the bar, and hold on white knuckled, who said they felt like they just went through a boxing match.
